Summertime means that peaches are back in season! Peaches are naturally sweet, and packed with vitamin A, vitamin C, and potassium. Peaches taste great on their own, but there’s two areas where they really shine: breakfast and dessert. Here are two easy, healthy recipes to help you get the most out of your summer peaches!

For breakfast: Peach Mango Smoothie
Smoothies are my go-to breakfast when I need a fruit fix to get me going in the morning. This smoothie is a great, simple recipe that hits all the smoothie sweet spots. It's sweet, slightly tart, and made almost entirely of fruit. Throw it in the blender and take it on the go!

Ingredients:

  • ½ Mango- fresh or frozen
  • 5 cups of frozen or fresh pineapple
  • 5 cups of frozen or fresh peaches
  • ½ cup of orange juice (use almond or soy milk for a creamier, sweeter smoothis)

Preparation:
Cut the mango into one inch pieces and add to blender. Add orange juice next, and then the rest of the fruit on top. Blend until smooth, and enjoy!

 

For dessert: Ten Minute Peach Cobbler
Peach cobbler is one of my favorite desserts, but many recipes are saturated with butter and added sugar. This recipe is perfect to serve you and a few others, and is free of added sugar or butter. As a bonus, this recipe can be used at any time of year with any fruit you want!

Ten Minute Peach Cobbler

Ingredients:

  • 4-6 fresh peaches
  • ¼ cup of coconut oil
  • ½ cup of almond flour
  • Dash of vanilla extract

Preparation:

  1. Cut peaches into slices. Peel if desired.
  2. Melt coconut oil on a skillet.
  3. Add peaches to skillet and cook for 5 minutes, or until peaches start to soften.
  4. Add almond flour and vanilla, stir until peaches are coated.
  5. Cook for 1-2 minutes and serve.

Treat yourself to one of these recipes, or just grab a peach to eat on the go. Either way, you're taking advantage of one of nature's most delicious summer treats!
