If you’re looking for a way to turn an unhealthy summer barbecue into an opportunity to enjoy delicious whole grains, fruits, and veggies, do yourself a flavor  and bring a delicious, tasty quinoa salad!

Quinoa is one of those things that my friends had to convince me to try. Though I always try to eat as healthy as possible, I'm not really one to jump on "trendy" health food trains. But one summer, a friend of mine made a delicious quinoa salad for our party. It was sweet, savory, and multilayered with a bunch of different textures. I was sold.

I never got my hands on her recipe, but PopSugar Food has one of my favorite summer quinoa salad recipes. It’s delicious and full of good ingredients, and it’s sure to make a quinoa lover out of anyone.

Ingredients:

  • ½ lb. feta cheese
  • 2 cups cherries, pitted and sliced
  • ¼ cups almonds
  • 2 cups quinoa

For the dressing:

  • Cherry juice
  • 4 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 3 tbsp shallot
  • Salt to taste
