No matter what a healthy eater you are, there’s nothing wrong with craving a cookie now and then. But even with vegan or gluten-free recipes, chances are you're still taking in way more sugar and fat then you want to.
Olga, from the YouTube channel Fabulunch, has the recipe for you. These coconut ginger cookies are free of added sugars and gluten, and are 100% vegan! They’re the perfect cookies to indulge in when you want a guilt free, sweet snack. Ingredients
- ½ cup of coconut flour
- 2 tbsp of hemp seeds, flax seeds, or chia seeds, extra for decorating
- pinch of salt
- ½ cup of melted coconut oil
- ¾ cup of almond milk
- 2 tbsp of grated ginger
- 10 drops of liquid stevia
Directions
- Preheat your oven to 350F and line a baking sheet with parchment paper.
- In a medium bowl, sift coconut flour. Add hemp seeds, salt and mix well.
- In another bowl, combine wet ingredients: coconut oil, almond milk, stevia and grated ginger. Stir.
- Add the dry ingredients. Stir for 1 minute to let the coconut flour absorb some of the liquid.
- Using a tablespoon, form cookies and plop them onto the baking sheet.
- Gently press each cookie with your finger and sprinkle with some extra hemp seeds.
- Bake cookies for 25-30 minutes until they become a light golden color.
- Remove from the oven and let cool.
- Enjoy with a glass of almond milk or a cup of tea.
