One of the best superfoods to take over 2015 has been cauliflower--but since it's incredibly bland, tasteless, and just plain boring, many people still haven't incorporated it into their diet...yet.

Still, cauliflower has an abundance of health benefits. Not only is it packed with vitamins A and K, it's also really low on the glycemic index.

What is the glycemic index, you ask? It "is a ranking of carbohydrates on a scale from 0 to 100 according to the extent to which they raise blood sugar levels after eating.

Foods with a high GI are those which are rapidly digested and absorbed and result in marked fluctuations in blood sugar levels," according to the University of Sydney.

When we say that it's low on the scale, that means that your body will digest it more slowly and your blood sugar will not spike like it would if you had, say, a donut.

Now that you know why you should eat cauliflower, how should you eat it?

We got three ways for you: the buffalo cauliflower bites, loaded baked cauliflower, and a roasted red pepper and cauliflower soup.
